The decomposition temperature of sodium ascorbate is 218 ℃. It is stable in dry state, and its color deepens when exposed to light. It is slowly oxidized and decomposed after moisture absorption and in aqueous solution. Ascorbic acid is more soluble in water (62 G/100 mL) than ascorbic acid, and the pH of 10% aqueous solution is about 7.5.
